Method

1.Using an electric mixer. beat butter and sugar in a medium bowl until light and creamy.
2.Transfer mixture to a large bowl; stir in sifted flour. Knead dough on a lightly floured surface 30 seconds, or until smooth.
3.Divide dough into 2 portions. Shape each portion into a disc. Wrap in plastic food wrap; chill 30 minutes.
4.Preheat oven to moderate, 180°C (160°C fan-forced). Grease and line 2 large baking trays with baking paper.
5.Roll each dough portion between sheets of baking paper until 5mm thick.
6.Using a 7cm round pastry cutter, cut 12 cookies from dough. Place cookies on prepared trays, about 5cm apart. Sprinkle boiled sweets over cookies.
7.Bake 10-12 minutes, or until lightly golden. Cool on trays (biscuits will firm). Serve.

We used tiny boiled sweets called Bo Peeps; if you use larger boiled sweets, chop into 5mm pieces.
