Calamari and parsley salad

A light and refreshing seafood salad made with fresh calamari, lemon rind, garlic and parsley - this delicious calamari salad recipe would be perfect for a hot summer's day.

Method

1.Score shallow diagonal slashes on inside of calamari tubes. Dust with combined seasoned flour and garlic.
2.Heat oil in a frying pan on high. Cook calamari, scored side down, for 2 minutes, until opaque. Remove and cut into 1cm slices.
3.Toss calamari with parsley, rind and juice. Serve with lemon slices.
