Ingredients

Method

1.Heat oil in a large frying pan on medium. Add potato and cook, shaking pan occasionally, 10 minutes, until pale golden.
2.Combine tomato paste and 3/4 cup water. Add paste mixture to potato. Season to taste. Cover and simmer 5-10 minutes, until potato is tender. Transfer to a bowl and season with pepper.
