Method
1.Heat oil in a large frying pan with a lid on medium. Add potato and cook, tossing occasionally, for 10 mins, until pale golden.
2.Combine lemon juice and 3/4 cup water in a small jug and add to pan. Season to taste, cover and simmer for 5-10 mins, until potato is tender. Serve with barbecued lamb.
