Blue cheese dressing

Method

1.Crumble the blue cheese and place 75g of the cheese in a food processor. Add the mayonnaise, lemon juice, soured cream, mustard and seasoning.
2.Fit the lid and then blend on speed 4 for approximately 30 seconds, scraping if necessary, until well combined. Remove the lid and blade and stir in the remaining crumbled blue cheese.
3.Transfer to a jar or jug, cover and chill for up to 5 days. Shake or stir just before using.
4.Serve drizzled over a tossed salad of crispy bacon, walnut, pear, avocado and salad leaves.
