Ingredients

Method

1.Preheat oven to 220°C/200°C fan forced. Line a baking tray with baking paper.
2.Combine asparagus and carrot in a microwave-safe bowl. Cover with plastic food wrap. Microwave on High (100%) in 30-second bursts until just soft. Refresh under cold water. Drain.
3.Divide asparagus and carrot among steaks, placing at short end. Roll up firmly. Wrap bacon around centre, secure with toothpicks.
4.Heat half the oil in a large frying pan over moderate heat. Add roll-ups; cook and turn for 2 minutes or until bacon is browned. Transfer to prepared tray.
5.Bake for 10 minutes or until cooked. Cover with foil; rest for 5 minutes, then remove and discard toothpicks. Slice.
6.Cook beans in a medium saucepan of boiling water for 3 minutes or until heated. Drain.
7.Place beans in a medium heatproof bowl. Add the remaining oil, onion, tomato and vinegar; toss to combine. Season.
8.Serve sliced beef roll-ups with bean mixture and lemon wedges.

Sizzle steak is thinly sliced beef steak (minute steak) available from major supermarkets. Use a sliced beef or chicken schnitzel instead of sizzle steak.
