Method
1.Heat a lightly oiled saucepan on high. Cook mince for 4 minutes, stirring to break up any lumps, until no longer pink. Remove from pan and set aside.
2.Reduce heat to medium and cook vegetables for 4 minutes, until softened. Stir in rice and cook for 2 minutes. Add mince and 2 cups water. Season, stir and bring to boil.
3.Reduce heat to low. Simmer for 18-20 minutes, covered, until rice is cooked and liquid has evaporated.
4.Serve with parsley.
You could also use chicken or pork mince for this recipe.
