Barbecued mushroom burgers

They're not only meat for vegetarians, mushrooms are full of flavour, especially when they're filled with cheese, grilled and thrown in a burger!

Ingredients

Method

1.Preheat a barbecue grill on medium-high.
2.Brush both sides of mushrooms with a little oil. Barbecue, stem sides down, for 6 minutes or until almost tender. Turn and top with cheese. Cover with barbecue hood or an upturned roasting pan and cook for 3 minutes or until cheese melts. Transfer to a plate.
3.Meanwhile, brush cut sides of bread rolls with remaining oil. Barbecue, cut sides down, for 2 minutes or until toasted.
4.Divide lettuce and tomato slices between bases of damper rolls. Top with mushrooms, cheese side up, pesto and roll lids. Serve.
