Ingredients

Nuoc cham dressing

Method

1.Mix all dressing ingredients together, taste and adjust sourness, saltiness and pungency. The dressing will keep for 3-4 days in the fridge in a covered glass bowl or jar.
2.Dry bamboo skewers then rub them lightly with oil. Thread chicken strips onto skewers, caterpillar-fashion. Press meat flat after threading, so that it will touch the hotplate evenly. Put skewers in a dish and drizzle with 1 tablespoon oil.
3.Preheat a barbecue hotplate on medium heat. Lightly oil hotplate and put on the skewers. Cook chicken reasonably quickly without letting it burn and making sure it cooks through; take care not to overcook it or it will become dry.
4.Towards the end, douse with a little of the dressing, let it sizzle briefly, then serve skewers immediately on lettuce leaves with more dressing and scattered with coriander.

Check label of fish sauce if eating gluten-free.
