Method
1.Preheat oven to 200°C (180°C fan-forced). Line a large baking tray with baking paper.
2.Trim carrots, leaving 2cm of green stalks attached. Wash well to remove dirt. Lightly peel. Blanch in a large saucepan of boiling water for 2 minutes; refresh under cold water. Gather 4 carrots to make a bundle. Wrap bacon around carrots. Repeat with remaining carrots and bacon.
3.Transfer bundles to prepared tray. Spray with oil. Bake 15-20 minutes or until browned. Combine butter and honey; drizzle over hot carrot bundles. Serve immediately.
Serve with roast chicken or beef. To serve with roast, bake carrots in oven as recipe directs once meat is resting. Heat honey in microwave oven on High (100%) for 10 seconds
