Method

1.Preheat oven to moderate, 180°C (160°C fan-forced). Grease a 12-hole (1/2-cup) oval friand tray.
2.Place 1/3 cup flour and brown sugar in a medium bowl. Rub in 50g butter to make fine crumbs; stir in pistachio.
3.Using an electric mixer, beat remaining butter and caster sugar in a small bowl until light and fluffy. Beat in eggs, one at a time, until combined.
4.Transfer mixture to a large bowl; sift extra plain flour and self-raising flour over butter mixture. Add buttermilk and apple; stir until well combined.
5.Spoon into prepared holes. Sprinkle tops with crumble mixture.
6.Bake 20-25 minutes, or until a skewer inserted in the centre comes out clean. Cool 10 minutes in tray. Transfer to a wire rack to cool completely.
7.Serve dusted with icing sugar.

Using a knife, ease cakes from tray to stop crumble falling off.
