Method
1.Melt butter in a small saucepan on medium. Add flour and cook, stirring, 1 minute. Remove from heat. Gradually stir in combined cider and milk, stirring until smooth.
2.Return to heat and cook, stirring, until mixture boils and thickens. Simmer 3 minutes. Stir in cheese and mustard powder. Season to taste.
3.Preheat grill on high. Line an oven rack with baking paper.
4.Arrange bread on rack and top evenly with cheese mixture. Sprinkle with paprika. Grill 3-4 minutes, until topping is bubbling and just beginning to turn golden. Serve hot with apple slices.
Apple cider can be replaced with 1/4 cup apple juice and 1/4 cup extra milk.
