Apple and cinnamon muffins

Method

1.Preheat oven to 180°C (160°C fan-forced). Line a 12-hole, 1/3-cup muffin pan with paper muffin cases.
2.Combine flour, bran cereal, brown sugar, and 1/2tsp cinnamon and stir to combine. Peel and grate one of the apples, then toss through the dry ingredients with the banana.
3.In a separate bowl, whisk together oil, egg and buttermilk. Pour liquid ingredients over dry ingredients and stir until they have just come together. Do not over-mix, mixture should be lumpy. Spoon batter into the prepared muffin cases.
4.Slice remaining apple into thin slices. In a small bowl, combine remaining cinnamon and the sugar. Top each muffin with a slice of apple and a sprinkle of cinnamon sugar.
5.Bake, 20 to 25 minutes, or until the muffins are cooked through. Remove to a wire rack and allow to cool.
6.Store in an airtight container in the refrigerator.
