Almond topping
Method
1.Preheat oven to 180°C. Grease a 25cm x 30cm Swiss roll pan, line base with paper; grease paper.
2.Combine cream, sugar, essence and eggs in bowl, whisk until combined, whisk in flour in 2 lots. Spread mixture into prepared pan. Bake in moderate oven for 15 minutes.
3.To make almond topping, melt butter in saucepan, stir in sugar, cream and flour. Stir constantly over heat until mixture boils and thickens, remove from heat, gently stir in almonds.
4.Spread slice with topping, bake further 15 minutes or until golden brown. Cool in pan before cutting.
