1.In a small jug, whisk oil, spice mix, lemon and seasoning together.
2.Place chicken pieces in a large snap-lock bag and pour mixture over, tossing to coat well. Seal bag and marinate for 1 hour or overnight.
3.Preheat oven to moderate, 180°C. Remove chicken from marinade. Transfer to a rack in a baking dish. Sprinkle with salt. Pour a little water into dish to cover base.
4.Bake chicken for 40-45 minutes, until chicken is golden and cooked through. Serve with lemon wedges and salad.
You can also cook this chicken on a barbecue grill or char-grill on low heat. Simply turn halfway through cooking. Za’atar is a Middle Eastern spice blend consisting of sumac, thyme, sesame seeds, marjoram and oregano. Look online for recipes … or for where to buy a premix. If you live in a city, you can find them in specialty food stores.
