Method

1.Peel the orange taking care to remove as much pith as possible. Using a small sharp knife cut flesh into fine segments.
2.Remove tough stems from the watercress and place the leaves in a dish with mint, peas, orange and crumbled feta.
3.Mix together the oil, orange juice, mustard, brown sugar with salt and pepper, and drizzle over the salad.
