Method

1.Heat oil in a medium frying pan over moderate heat. Add mince; cook, stirring with a wooden spoon to break up lumps, for 5 minutes or until browned. Add carrot and zucchini; cook and stir for 2 minutes.
2.Add onion, fish sauce and bean sprouts. Season with pepper. Remove from heat; cover with foil to keep warm.
3.Microwave crepes, 2 at a time, on High (100%) for 1 1/2 minutes or until heated. Spoon mince mixture over one half of each crepe; fold over to enclose. Place crepes on serving plates. Combine hoisin sauce with 1 tablespoon warm water. Drizzle sauce over crepes. Serve sprinkled with peanuts.
