Method

Vegetable couscous with tahini yogurt

1.Preheat oven to 200°C (180°C fan-forced). Line 2 baking trays with baking paper.
2.Combine onion, garlic, pumpkin, capsicum and zucchini in a large bowl. Drizzle vegetables with oil and sprinkle with spice mix; toss to combine. Spread vegetables over prepared trays. Bake for 25-30 minutes or until tender. Remove garlic and set aside.
3.Meanwhile, place couscous in a large heatproof bowl; stir in 1 cup boiling water. Cover with plastic food wrap; set aside for 5 minutes or until liquid is absorbed. Using a fork, fluff and separate grains.
4.Add vegetables, lemon juice and coriander to couscous. Season with salt and pepper. Peel garlic; mash with a fork. Combine garlic, yoghurt and tahini in a medium bowl.
5.Spoon couscous into serving bowls; top with yoghurt mixture. Serve at once.
