Method

1.Combine milk and egg in a medium shallow bowl. Place breadcrumbs on a plate. Toss veal in flour to coat. Dip each piece in milk mixture then toss in breadcrumbs to coat.
2.Preheat an oven-grill to hot.
3.Heat the oil in a large frying pan over high heat. Cook veal for 1 minute each side or until golden. Drain veal on paper towels and place on a baking tray. Top each with 1/4 of the sauce, oregano and cheese.
4.Grill for 2-3 minutes or until cheese is golden. Serve with rocket and lemon wedges.

You can use chicken tenderloins or fillets – pound with a meat mallet before crumbirrg.
