Method

1.Preheat oven to moderate, 180°C. Line an oven tray with baking paper.
2.To make the patties; combine mince, breadcrumbs, egg, relish, mustard, sauce and thyme in a bowl. Mix well, season to taste. Shape into 4 equal-sized flattened patties. Cover and chill until required.
3.Heat oil in a large frying pan on high. Cook patties 3-4 minutes each side, until well browned. Transfer to tray. Top each patty with a cheese slice. Place in hot oven and turn heat off.
4.Cook bacon in same frying pan on high, 1-2 minutes each side, until crisp. Keep warm.
5.To make the onion rings; combine flour and water to a smooth paste in a bowl. Season to taste. Heat oil in a heavy-based saucepan. In batches, dip onion rings into batter. Lower into oil and fry 1-2 minutes. Drain on paper towel.
6.To serve, spread bottom half of buns with aioli. Top each with rocket, tomato, patty, gherkin and bacon. Serve with tomato sauce and accompany with onion rings.
