Method
1.Preheat oven to 180°C. In a bowl, combine tomatoes, olives, 2 tablespoons oil and lemon juice.
2.Heat remaining oil in a frying pan. Season chicken to taste and fry for 2-3 minutes each side or until golden. Transfer to a baking pan.
3.Pour tomato mixture over chicken, toss well and season to taste. Bake for 15-20 minutes, turning once, until chicken is cooked through. Top with basil leaves and serve with rice.
If desired, add 1 tablespoon capers to tomato mixture. Instead of frying, simply toss chicken with other ingredients and bake until cooked through.
