1.In a large bowl, combine brown rice, tuna, cherry tomatoes, red onion, parsley and dill. Season salad to taste.
2.Meanwhile to make dressing; in a jug, whisk together olive oil, wholegrain mustard, red-wine vinegar and sugar. Drizzle over salad, tossing well.
We used medium grain brown rice for this recipe, but you could use long grain rice if preferred. If liked, you could add some chopped char-grilled vegetables, available in jars or from the deli.
