Ingredients: Balsamic dressing; 2 tablespoon olive oil; 1 tablespoon balsamic vinegar; 1 teaspoon finely grated lemon rind; 1 tablespoon lemon juice; 1 teaspoon dijon mustard; 1 clove garlic, crushed; 185 gram can tuna in springwater, drained, flaked; 300 gram can red kidney beans, drained, rinsed; 1 (100g) red onion, thinly sliced; 250 gram cherry tomatoes, halved; 1/2 cup coarsely chopped fresh basil; 1 (250g) avocado, thickly sliced; 100 gram baby rocket leaves

1 (250g) avocado, thickly sliced

100 gram baby rocket leaves

Method

1.To make balsamic dressing, combine ingredients in a bowl and whisk well.

2.Place salad ingredients in large bowl. Add dressing and toss gently to combine.
