Tuna and white bean salad

The Italian pairing of canned tuna and cannellini beans makes a super-simple yet satisfying lunch. Serve over salad greens and with a toasted pita bread to create a nourishing meal.

Method

1.Toast pita bread under a preheated grill, on both sides, until crisp. Break each piece into quarters.
2.In a large bowl, combine tuna, beans, tomatoes, rocket, celery, radish and onion.
3.Drizzle lemon juice, vinegar and oil over salad. Season to taste and toss to coat. Serve with toasted pita.

If tuna’s not to your liking, this salad is also delicious made with salmon. Rocket (or arugula) supplies vitamins, minerals and antioxidants. It’s low in kilojoules with virtually no fat or sodium.
