1.Cook pasta in a large saucepan of boiling salted water following packet instructions, until al dente.
2.Heat olive oil on medium and saute onion and garlic cloves for 2-3 minutes, until tender. Stir in diced tomatoes, anchovy fillets, sugar and chilli powder. Simmer for l0 minutes. Carefully mix through tuna, olives and capers.
3.Heat gently for 1-2 minutes. Toss sauce through pasta, adding spinach. Serve with crusty bread.
If liked, use passata in place of diced tomatoes. If you have basil in the garden, use it in place of the spinach.
Note
