1.Cook pasta in boiling salted water 12 minutes, or until tender but firm to the bite. Drain; rinse under cold water. Transfer pasta to a large bowl; add tomato.
2.Meanwhile, combine zest, juice, oil and garlic in a screw-top jar; shake well to combine.
3.Pour dressing over pasta mixture. Add parsley; stir until combined. Add ricotta; season with salt and pepper.
Risoni is rice-shaped pasta; for a slightly cheaper option, use macaroni. For best results, make just before serving.
Note
