Tomato dhal

Rich and fragrant Indian curry with tomato and lentils.

Method

1.Peel onion and chop finely. Heat oil in a large saucepan and cook onion until just soft. Wash lentils. Add to onion and cover with water. Bring to the boil with salt and turmeric. Cook for 20 minutes or until soft.
2.Place tomatoes in a bowl. Pour over boiling water and leave for 10 minutes. Drain. Peel and chop tomatoes roughly.
3.Peel root ginger and grate. Mix tomato, ginger and coconut cream through dhal. Simmer a further 10 minutes. Serve scattered with chopped coriander and sprinkled with garam masala.
