1.Combine tomato, capsicum, chilli, herbs and ginger in a large bowl.
2.Whisk garlic, oil and fish sauce in a small bowl.
3.Add chicken to tomato mixture. Drizzle dressing over salad; toss to combine. Spoon into shallow serving bowls. Serve with lime wedges.
Use shredded barbecued chicken breast instead of smoked chicken.
