.Combine beef mince with sweet chilli sauce and half the coriander; season. With wet hands, form 16 balls; place on a plate and chill 10 minutes.
.Meanwhile, combine onion, green onion, tomato, cucumber, chilli, lettuce, mint and remaining coriander in a bowl.
.Combine lime juice, sugar and fish sauce in a jug, stirring until sugar dissolves.
.Lightly spray a non-stick frying pan with cooking oil spray; heat on medium. Cook meatballs 10-12 minutes, rolling in pan so they keep their shape, until browned and cooked.
.Add meatballs to salad. Drizzle with dressing; gently toss and serve.
If the meatballs are browning too quickly, finish cooking them in a hot, 200°C, oven (180°C fan-forced).
