Method
1.In a shallow dish, mix 1 tablespoon oil, zest, juice, coriander and garlic. Add chicken and season to taste. Cover and marinate 10 minutes.
2.Finely chop half the onion. Place in a bowl with vinegar.
3.Cut remaining onion in cubes. Thread onto skewers alternately with chicken.
4.Preheat a barbecue or char-grill pan on high. Cook skewers 8-10 minutes, turning, until cooked through.
5.Make a salad with tomatoes, olives, onion mixture and parsley. Add remaining oil and season. Serve skewers with salad and mayonnaise.
Zest up the mayonnaise with a squeeze of lemon and a little crushed garlic.
