Method

1.Preheat oven to moderate, 180°C.
2.Place chicken in a baking dish. In a bowl, combine remaining ingredients. Brush chicken with mixture. Bake for 40-45 minutes or until cooked, basting occasionally.
3.Meanwhile, to make almond pilaf, heat oil in a saucepan on high. Saute onion for 2-3 minutes, until tender. Stir in rice. Add stock, bring to the boil. Reduce heat to low and simmer, covered, for 10-12 minutes, until liquid is absorbed and rice is tender. Remove from heat. Stir in peas, currants and almonds. Cover and rest for 5 minutes. Serve chicken on pilaf with lime halves.
