Method
1.Place couscous in a large bowl. Pour over combined water, 2 tablespoons lemon juice and 1 tablespoon zest. Cover with plastic wrap. Set aside 5 minutes.
2.Fluff couscous with a fork. Stir tomatoes, parsley, currents and onion through. Season to taste.
3.Serve falafel with couscous and hummus. Accompany with flat bread.
You can replace the couscous with cooked quinoa or soaked cracked wheat, if preferred.
