Method
1.Shred chicken breast with fingers, tearing into long strips. Set aside. Cut cucumber lengthways into thin slices, then cut each slice into 6cm-long thin strips.
2.Combine all ingredients in a large bowl. Place in a serving bowl and sprinkle with extra Szechuan pepper and a little salt, if desired. Serve.
For a bit of extra crunch add 1 cup of celery cut into very thin matchsticks.
