Method

1.Bring a large saucepan of water to the boil. Add pork; boil for 3 minutes. Drain pork. Add soy sauces, sherry, sugar, star anise, cinnamon, ginger and garlic to pan; cook and stir over moderate heat for 1 minute or until combined.
2.Return pork to pan. Bring to the boil. Reduce heat: simmer, uncovered, for 1 hour 30 minutes or until pork is very tender and sauce is syrupy. (You may need to stir occasionally as sauce thickens.)
3.Meanwhile, soak noodles in boiling water in a medium heatproof bowl for 3 minutes; stir to separate strands. Drain.
4.Place carrot and snow peas in another heatproof bowl. Cover with boiling water; stand for 3 minutes. Drain. Toss vegetables with bean sprouts and onion.
5.To serve, place noodles in large shallow serving bowls. Top with pork and drizzle with sauce. Pile vegetables over pork and serve while hot.

Prepare pork a day ahead it will be even tastier the next day. If whole star anise is not available, use about half a teaspoon ground star anise. If ground is also unavailable, add an extra cinnamon stick. Try shaved palm sugar instead of brown sugar; use Chinese rice wine instead of sherry. To bruise garlic, place on a chopping board. Use the flat side of a large knife blade to gently flatten.
