Method
1.Heat oil in a large frying pan on high.
2.Add chicken and spices; saute 4-5 minutes, or until browned.
3.Blend in apricot nectar, stock, dried apricots, beans and olives; season to taste. Simmer 4-5 minutes.
4.Serve apricot chicken with couscous. Top with coriander leaves.
