Ingredients

Method

1.Chop and score calamari tubes. Cut into large cubes.
2.Heat oil in a wok or large frying pan on high; stir-fry calamari 1 minute.
3.Add lemon juice, sauces and water; cook 2 minutes, until calamari is tender. Transfer to a large bowl. Cool slightly.
4.Add tomatoes, cucumber, red onion, mint leaves, coriander leaves, green onions and lemongrass; toss to combine
5.Serve salad on a bed of radicchio leaves.

To remove seeds from cucumber, halve lengthways and scrape out the seeds with a teaspoon.
