Method

1.Combine rice and stock in a large saucepan and bring to boil. Cover and simmer for 10 minutes, until par-cooked.
2.Place eight 20cm-squares of baking paper or foil on a work surface. Place 1 strip of banana leaf in the centre of each square.
3.Top with 1/2 cup of rice, capsicum, ginger, onion and coriander. Fold banana leaf over filling and wrap in baking paper or foil to enclose. Tie with string.
4.Steam the parcels over simmering water for 10 minutes. Open and serve with soy sauce.

For a more substantial meal add barbecued pork, green shelled prawns, barbecued duck or lap cheong (Chinese dried pork sausage) to the rice packages before wrapping.
