1.Place pork in a large saucepan with enough water to cover. Bring to boil on medium heat; simmer 1 minute.
2.Drain pork well. Combine pork, water, marinade and garlic in a wok or large saucepan. Bring to boil, stirring. Reduce heat to low; simmer, stirring, 20-25 minutes, until very tender.
3.Meanwhile, to make fried rice, spray a wok or frying pan with oil. Add rice and spice paste; toss 1 minute. Add corn, peas and onions; cook, stirring, 5 minutes.
4.Top pork with fried shallots. Serve with fried rice.
Simmering spare ribs for 1 minute removes some fat. If you have more time, simmer ribs slowly for up to 1 hour. Add a little chopped ginger and chilli, if desired.
