Method
1.Bring a wok or large frying pan of water to the boil. Line a bamboo steamer basket with baking paper.
2.Place snapper in basket; season to taste. Scatter ginger over fish. Cover; steam over simmering water 3-4 minutes.
3.Meanwhile, shred green onions and toss together with coriander. Sprinkle half over fish; steam a further 3-4 minutes, until fish is cooked. Transfer fish to serving plate.
4.Combine soy sauce with sesame oil; drizzle over fish. Sprinkle with remaining onion and coriander.
5.Serve fish with rice and baby pak choy.
Inexpensive bamboo steamer baskets are readily available from Asian supermarkets.
