Steak sandwich with bearnaise sauce

The addition of creamy, cheese bearnaise sauce makes this tasty steak sandwich even more delicious. Served with caramelised onions and fresh vegetables atop toasted ciabatta loaf, it is wonderful enjoyed with fresh chips as a filling lunch.

Ingredients

Method

1.Cook bread and frozen chips as packet directs. Make bearnaise sauce as packet directs.
2.Meanwhile, heat half of the oil in a large frying pan over high heat. Add onion. Cook, stirring, 7-8 minutes or until golden brown. Transfer to a heatproof bowl.
3.Heat remaining oil in pan. Add beef. Cook 1-2 minutes for medium, or until cooked to your liking. Cover with foil. Rest 1 minute.
4.Cut bread in half horizontally. Top with rocket, beef, beetroot, tomato, onion and half of the bearnaise sauce. Cut in half. Serve with chips and remaining sauce.

Par-baked ciabatta bread is sold at most major supermarkets. If unavailable, use individual rolls or thick bread slices. If bearnaise sauce is unavailable, use hollandaise sauce instead, adding a small handful of chopped herbs.
