1.Melt spread in a medium saucepan over moderate heat, Add flour: cook and stir for 1 minute or until combined. Gradually add milk, stirring until well combined. Cook and stir over low heat tor 2-3 minutes until mixture boils and thickens. Season with salt and pepper. Grate half the cheese; stir into sauce until combined. Remove from heat.
2.Preheat an oven-grill to high. Spread 4 slices of bread with mustard. Thinly slice remaining cheese and arrange on top, Top with spinach and remaining bread. Place on a baking tray, Cook under grill for 1-2 minutes or until golden brown.
3.Turn sandwiches over, spread thickly with cheese sauce. Place under grill for 2 minutes or until golden brown. Serve.
You can use any low-fat cheese.
Note
