Method
1.Heat a large saucepan on high. Spray with oil and saute onion for 2-3 minutes or until tender.
2.Add one can white beans and stock. Bring to the boil. Reduce heat and simmer for 10 minutes.
3.Using a hand blender or food processor, process soup until smooth. Blend in cream. Stir through spinach and remaining beans.
4.Reheat gently and season to taste. Serve topped with cracked black pepper.
