Method
1.Sift flour and salt into a bowl. Add sour cream; knead briefly in bowl. Set aside 30 minutes to rest.
2.Divide dough into 2 equal portions. Roll each portion into a 25cm circle. Top each with half the spinach and half the feta. Fold dough in half to enclose filling. Seal edges with a fork.
3.Brush dough with oil. Sprinkle with sesame seeds. Heat a large frying pan over moderate heat. Cook gozleme 4 minutes each side or until golden. Cut into wedges. Divide wedges between 2 airtight containers; chill. Serve with lemon wedges.
To reheat: Preheat a sandwich press, then heat gozleme until warmed. Gozleme is even good at room temperature or cold.
