1.Preheat oven 180°C. Lightly grease a 20cm square casserole dish or cake pan.
2.Heat oil in a large frying pan on high. Saute spinach and onion 4-5 minutes, until spinach wilts. Place mixture in a strainer and drain well. Cool slightly.
3.Transfer spinach mixture to a large bowl. Mix in eggs, cheeses, parsley and nutmeg. Season to taste.
4.Brush 4 sheets filo with butter, and fold in half. Layer in pan. Pile with filling. Brush remaining halved pastry with butter and layer over filling to cover.
5.Bake 20-25 minutes, until crisp, set and golden. Serve in slices with salad.
