Method

1.Heat oil in a large frying pan on high. Cook sausages for 10-12 minutes, turning, until golden and cooked through. Remove from pan.
2.Saute onion and garlic in same pan for 1-2 minutes, until onion is tender. Add curry powder and cook, stirring, for 1 minute, until fragrant.
3.Blend in tomatoes and eggplant and cook for 2-3 minutes. Slice sausages and stir into eggplant mixture along with rice.
4.Cook, stirring, for 4-5 minutes, until heated through. Add currants. Serve sprinkled with parsley. Accompany with crusty bread.
