Method
1.Heat oil in a wok or large frying pan on high. Stir fry onion, lemongrass, chilli, ginger and garlic for 1-2 minutes, until fragrant.
2.Add pork and stir fry for 5-6 minutes, breaking up lumps as it cooks. Mix curry paste through, and stir-fry for 1-2 minutes.
3.Add beans, lime juice, sauce and sugar. Stir fry for 1-2 minutes, until the beans are tender-crisp.
4.Stir in half the basil with noodles, tossing to combine. Serve topped with remaining basil leaves.
If Thai basil is not available, you can use coriander. If you prefer less heat in this dish, deseed the chilli and use a mild curry paste.
