Coriander chutney
Method
1.To make coriander chutney, place all ingredients in a food processor and process until smooth.
2.Spread half of coriander chutney over four slices of bread and top with tomato, cucumber and onion. Top with remaining chutney, potato slices and bread. Cut and serve.
Remember to boil a few extra potatoes the night before with dinner to make this delicious Indian-inspired sandwich.
