Papaya salsa
Method
1.Coat fish lightly in seasoning mix, shaking off excess.
2.Heat oil in a large frying pan on high. Cook fish 2-3 minutes each side, until flesh flakes easily when tested with a fork. Drain on paper towel.
3.To make papaya salsa, combine all ingredients well in a small bowl.
4.Serve fish on a bed of salad leaves, topped with papaya salsa. Accompany with lime.
