Method
Spicy corn and fish fritters with avocado salsa
1.Sift flour and seasoning together into a large bowl. In a jug, whisk milk and egg-yolk together. Pour into flour, stirring to form thick batter. Season to taste.
2.Stir fish and corn through batter. In a small, clean bowl. whisk egg-white until soft peaks form. Gently fold egg-white through batter.
3.Heat oil in a large frying pan on high. Drop heaped tablespoonfuls of mixture into pan in 2 hatches. Cook for 2-3 minutes each side, until cooked through and golden. Keep warm.
4.Serve warm fritters topped with salsa and accompany with lime wedges.
Salsa
5.In a small bowl, toss all ingredients together. Season to taste.
Use creamed corn instead of kernels. A little chopped chilli can be added to the salsa for added bite.
