Spicy chicken salad

1.Dust chicken with Cajun seasoning. Heat oil in a large frying pan on high. Cook chicken in batches for 3-5 minutes each side, until golden and cooked through. Cool and tear into large shreds.
2.Combine salad ingredients in a bowl. Add chicken and Garlic dressing and toss gently. Serve topped with sesame seeds.

Garlic dressing

3.Combine sugar and 1 tablespoon water in a saucepan. Stir on low heat until sugar dissolves. Increase heat and boil for 7 minutes, without stirring, until caramelised.
4.Remove from heat and carefully stir in balsamic vinegar. Strain into a bowl.
5.Gradually whisk in oil, 1 teaspoon at a time, until mixture thickness slightly.
